BANQUET CHEF


Immediate supervisor: Executive Chef

  • Directly responsible for all banquets; mise en place and execution, Supervision, guidance and training of staff regarding banquet execution.
  • Work with the sous chef to make orders and create prep lists.
  • Post all prep lists for specific quantities 3 days prior to event.
  • Assist sous chef in tracking product for costing.
  • Check on the status of all hot and cold food 45 minutes prior to service.
  • Ensure banquets are executed efficiently and on time with all backups in place.
  • Consistently maintains standards of quality, cost, eye appeal, and flavor of foods. Taste all food product before serving. Establish controls to minimize food and supply waste and theft.
  • Test and record new recipes.
  • Coordinates buffet presentations and checks mise en place before service time and inspects presentation of food items to ensure that quality standards are maintained.
  • Work closely with sous chef and banquet coordinator to ensure accuracy regarding banquet success.
  • Supervise set-up of all banquet buffet and displays, assist front of house in assigning food vessels.
  • Advance kitchen knowledge and share with others.
  • Maintain organization at a high standard.
  • Work closely with kitchen staff to ensure everything is labeled, dated and properly rotated with green tape.
  • Assist with the quality of food for staff meal. Ensure food is sanitary, well-seasoned, and cooked properly.
  • Supervise stewards when needed and give instruction as to sanitation, cleanliness, as well as supplementing kitchen prep.
  • Any other duties as assigned by executive chef.
